On the influence of ethyl alcohol on pepsin activity

Abstract

We accomplish a comparative study on the evolution of the system hydrochloric acid-pepsine-substrate, in absence and presence of ethyl alcohol, respectively, and we found a clear diminution of the peptic activity in this latest case. The possible mechanism of this phenomenon is explained in concordance of the facts observed by photometric and Chemical ways.
