Aragon Wine Yeasts Resistence to Antiseptics


The resistance of thirteen species of wine yeasts isolated in Aragón against the fungicide and fungostatic actions of two Chemical antiseptics: potassium pyrosulfite and sorbic acid has been tested, and the proportion between each inhibitory agent in every strain of yeasts and the lethal and levulostatic action, was layed down. It emerges from the results that yeasts of the Saccharomyces group are most resistant among all tested. It is pointed out as well how wine yeasts isolated in Aragon present an inhibitory resistance greater than other strains isolated in the rest of Spain and abroud.
